A pounded chicken breast instead of crust! I've posted more detailed commentary on my blog, here (http://tinyurl.com/ybrh49d), but the recipe is below. :)

Hottie Hen with a Pig Pizza

1 boneless, skinless chicken breast
1/4 cup tomato paste
1.5 tsp dried oregano
2 oz cheese, shredded (I used mozzarella and parmesan)
2 slices bacon, crisped and broken into pieces
1/4 cup pineapple, diced
2 Tbs jalapeno, diced (leave the seeds if you like it hot!)
1 Tbs red onion, diced

Place the chicken breast between two sheets of waxed paper. Using a mallet, pound it to 1/4 inch thickness. Saute chicken breast in butter over medium heat until cooked through, about 2 minutes per side. Place chicken breast in a pie plate and spread with combined tomato paste and oregano. Top with cheese and remaining ingredients. Bake at 400 degrees for 12-15 minutes, until cheese is melted and bubbly. Slice into wedges and serve hot. Serves 1.

575 calories, 21g carbohydrate, 26g fat, 66g protein.

(Compare that to 726 calories, 66g carbs, 30g fat, 55g protein if you put half the chicken breast, along with the other toppings, on 1/3 of a Boboli whole wheat crust.)

Barbey the chicken pizza sounds good! Kind of reminds me of the alice springs chicken at outback (sort of) but I like the idea of pounding the chicken flat in your recipe and the sauce etc.:D

For those that don’t eat tomato you can sub carrot puree (I stole that idea from Tarlach);) and a cheese sub is to grind nuts with water to make a paste, then add just a tiny splash of lemon juice to give it a tang. It’s more like ricotta in texture but since you would melt cheese then bake for most recipes it works. I haven’t made that in a long time but next time I do I’ll measure and get an exact recipe. I usually just wing it when I cook then don‘t write it down, bad habit!:eek:

Scrambled egg yolks have a cheesy consistency to me. I've always thought that'd be a good sub for cheese on a paleo pizza.

Thanks also to Posy for passing along Tarlach's idea of carrot puree instead of tomatoes, as well as the idea of using blended nuts with water and citrus instead of cheese. I will try these out and report back!

Finally, I like Kristine's scramble egg yolks idea as well. I wonder how an experiment of combining the nut/water/citrus combo in with scrambled egg whites might work? Hmm...

I haven’t tried it yet but I plan to…maybe this next weekend. I’ll take a picture when I make it. Right now I’m on a red meat kick after all that xmas turkey. So when I get over that I’ll give this recipe a go. Hmm, maybe I’ll invite people over for a primal pizza party! :)
