Hi
I'm going to jump right in here and admit that I rarely go over 20 grams of carbs a day. I am afraid of weight gain, so I keep it very low. I would love to be able to take it up to 50 grams without fear, since then I could eat more vegetables, which I like.

Any thoughts on my problem?

As long as you're eating healthy carbohydrates from non-starchy vegetables you should be just fine, after all, they do keep you regular! I myself load up on non-starchy vegetables for carbohydrates and haven't gained weight at all from doing so! You shouldn't be scared of a spinach salad with bell peppers and cherry tomatoes and artichokes!
