Yesterday was 4 eggs fried in grease from bacon we made. Throughout the day I feasted on grass fed beef ribs that we put in the crockpot with coconut oil and cooked for 5 hours. Nice and fatty, one of the best things I've eaten in a long time! When you finish the meat dump the remaining liquid in a container, refrigerate and use later for cooking eggs, etc.

That is some quality advice! I love slow cooked meat... Great stuff.

Annika - the eggs in coconut oil sound awesome! Are they better than when they are cooked in butter?
Pkafka - nice looking good you have there.
I hope some people post pictures of their thanksgiving feast!

Actually, I like eggs best fried in bacon fat. I usually have them that way, but I was trying to 1. shake things up and 2. increase my coconut oil consumption. I have eggs pretty much every morning, and am having eggs for dinner tonight. I love eggs! :)

Sounds like some good stuff, but I'd also recommend watching those carrot sticks. Although they are natural, carrots actually pack quite an insulin punch. They are deceptively sugar laden. Don't get me wrong, there are worse thing for you! But there are also much better substitutes for them too.

Thanks Therio - actually looking very forward to seeing some of your pics. It seems like our diets have a lot in common.
When you say efa's, you mean essential fatty acids, yes? You taking them in pill form?

Barbey! A lovely eating day. I am fasting today... Getting back on track after TG weekend (although I never got too far off track.
Btw - do you have a recipe for the Thai coconut soup? I find some online, but knowing yours would be nice :).

I wish it was Fage! That stuff is awfully pricy, though. I usually have Nancy's organic, plain, full-fat yogurt on hand. Last week, though, it was Brown Cow creamtop.

Good for you on the fasting day!
I don't exactly have a recipe for the Thai soup, as I cook "by feel" and it's a little different every time, but here's the jist of it:
1 small onion, julienned
1 pasilla or bell pepper, julienned
2 carrots, diagonally sliced
4 mushrooms, sliced
1 cup fresh green beans
1 cup cauliflower, sliced
1 handful dried tomatoes
1 can chicken broth
2 cans coconut milk
2 chicken breasts, cooked
1 Tbs fresh chili paste
1 tsp fresh ginger, grated
1 handful fresh basil leaves
Saute the veggies briefly in coconut oil. Add remaining ingredients, except basil, and simmer until veggies are al dente. Add basil leaves, stir gently until they wilt, and serve. Raw cucumber slices with cream cheese or plain yogurt and a sprinkle of fresh, minced chives makes a good side.
