IMO, one of the best foods out there is hummus! The garlic, the olive oil, and all of the other spices makes for a great treat. Chickpeas themselves have quite a bit of nutritional value--they are (relatively) high in protein, fat, and calcium. I eat them occasionally in hummus, salads, etc. However, chickpeas after all are legumes, so is there something better--more primal--that we could make hummus out of? Of course.

Here is a favorite recipe (I found this one on Son of Grok):


Two (2) washed, peeled, and cut zucchini
3/4 cup of tahini paste
1/4 cup of olive oil
1/2 cup of lemon juice
4 cloves of garlic, or more if you love garlic like me
2.5 teaspoons of sea salt
1/2 tablespoon of ground cumin


Throw all of these ingredients in one bowl, blend them up, and stick in the refrigerator! I always eat them with vegetables or spread over a nice grass-fed steak. Nothing better.

I am also a lover of Hummus, and like you have not found it hard to replicate in primal fashion. Actually, my hummus replacement already exists - Baba Ganoush. Here is my recipe:

1 1/2 lb Eggplant
3 tb Lemon juice
a few sprinkles of Course Sea Salt (I like Course)
2 ts Minced fresh garlic
3 tb Sesame tahini
-- (optional: substitute
-- yogurt or sour cream)
1/4 c Chopped parsley
1/2 c Toasted pine nuts
2 tb Olive oil

Enjoy!

TOASTED pine nuts, do you make these yourself or is there a place to buy them??? Have never seen them, not even at WF.

Toast them yourself, its the primal way! :)



Toasting pine nuts gives them roasty flavor, browns them, and makes them firmer, too.

It's easiest to do in a dry skillet over medium-low heat. Shake the skillet frequently to ensure even browning—the pine nuts are small and full of rich oil, and will burn quickly if you don't watch carefully. When the nuts are fragrant and browned, take the pan off the heat. Transfer the pine nuts to a plate to cool.
